To learn all the menu functions and what they mean, I had to attend a massive one-day hands-on workshop at Sony. I can tell you, this course was not cheap.
If you want to make the perfect set-up for your camera I would suggest, Testing, testing, and some more testing. I always go for the best possible image, as little tweaking as possible. 95% of the time I also use preset white balance. I leave the "special images" for the post-producrion facilties. The more information the post facility receives on tape, the better results they can achieve.
